A teppanyaki kaiseki experience built around rare local specialties
Dinner arrives as a full experience, not just a meal.
At Kissho Yamanaka (吉祥やまなか), a hot spring ryokan in Kaga, Ishikawa, a limited-time stay plan centers on a teppanyaki kaiseki dinner built around two local specialties: Noto-gyu (能登牛) and Nodoguro (のどぐろ).

Noto-gyu, a highly limited wagyu rarely distributed outside the prefecture, is served as a fillet steak. Nodoguro, a richly fatty white fish often compared to toro, is sautéed with Kaga vegetables. The course also includes sashimi from Hashidate Port, jibuni—a local duck stew—and a green curry made with regional produce.

Dinner is served at Teppanyaki Aotake (鉄板焼「青竹」), a modern restaurant set along the Kakusenkei Gorge. Chefs cook in front of guests, with sound, aroma, and conversation forming part of the experience.
Additional inclusions range from afternoon tea with Kaga pancakes topped with gold-leaf honey and sweet red beans, to private baths and performances of Yamanaka-bushi, a traditional folk song. New offerings this spring include rooftop yoga, stargazing, and mizuhiki crafting, a decorative cord-tying practice.
The ryokan sits along a 1.3km stretch of Kakusenkei (鶴仙渓), known for its scenic walks and seasonal kawadoko platforms built over the river. Kanazawa is about an hour away by car.



The plan runs from April 1 to September 30, 2026 (excluding select dates), with rates from ¥34,600 per person including dinner and breakfast.
