A summer-only herbal breakfast at Hoshinoya Karuizawa blends seasonal vegetables, medicinal principles and a quiet forest setting

Breakfast here starts with cooling down your body from the inside out.

At Hoshinoya Karuizawa, a resort in Nagano’s mountain town of Karuizawa, a new summer-only breakfast called Suzuna no Asagayuzen (涼菜の朝粥膳) arrives from June 1 to August 31, 2026. The program is developed in collaboration with Yomeishu Seizo, a long-established herbal liqueur maker known for its expertise in traditional wellness.

The concept leans on Eastern medicine principles like yin-yang balance and the “five properties” of food—categorizing ingredients by how they affect the body. Here, that translates into a menu designed to counter summer fatigue.

The meal centers on eight small dishes built around seasonal vegetables. Eggplant, tomato, and zucchini—ingredients considered to have a cooling effect—take the lead. Warming elements like ginger and Japanese pepper are added to offset chills from air conditioning, while venison, abalone, and yam appear as nutrient-rich boosts.

Kayu Juri,
Morning rice porridge made with vegetable and abalone broth

At the heart of it all is rice porridge made with vegetable and abalone broth. It draws on the idea of “Kayu Juri,” a traditional belief that rice porridge offers ten health benefits, from easing digestion to restoring energy. The use of non-glutinous rice keeps it light on the stomach.

Breakfast is served in the property’s coolest spot: a wooden teahouse tucked among trees along a natural breeze path. At roughly 1,000 meters above sea level, Karuizawa stays mild even in summer, with cool mornings and evenings that shape the flavor of its produce.

Only one group per day (up to four guests) can book the experience, and it’s exclusive to overnight stays. The price is ¥9,680 per person, with reservations required at least five days in advance.

Consider it less a meal, more a quiet reset—best taken slowly, before the heat catches up.
